Tofu, while an excellent source of protein, if you eat it every day the overt blandness is hard to mask with spices and herbs. It comes in a selection of textures for a variety of uses. From fruit smoothies to savory stir fry this bean is far more versatile than other legumes and even chicken.
As a vegetarian I’m aware that people believe that tofu is a staple in my diet but it isn’t. I use tofu as a dietary splurge. Some varieties are high in sodium and I always avoid it if I can.
My favorite way to have tofu is cubed and doused in spices like curry, ginger, garlic, and ground chipotle peppers. I dry it, toss it in spices, let it sit, then pan sear it in a little oil. From there I drain the oil and toss it in with whatever else I’m having.
I’ve tried a tofu smoothie, wasn’t the best thing ever. But then again, I don’t like smooties.

At this point in life I add garlic to everything because it keeps me grounded and even tempered. For the ancient Romans Garlic was a symbol of the cosmos, ever unfolding.

Yes, I know that coffee is not a vegetable. Most of the time it’s no even edible. But coffee is the nectar of the gods when it’s great. I lived in San Francisco for a few years and EVERYONE and I mean everyone on two wheels was a barista. They would talk about beans and gears and I was just out of the loop. Why do people talk about work so much? It wasn’t work they were discussing but it was the art and passion of coffee.
I’ve done the Barista thing. It’s a far more mentally demanding job than most would believe. If you’re in a busy coffee shop where everyone knows the menu and prefers their coffee souped up and milked out your brain might be boiled by the end of your shift.
But like all things edible, I’m a bit of a purist. I like my coffee black. Don’t get me wrong a chai latte is the bomb if you steam your milk right, but I’m not with all the frou frou. Besides, the milk, sugar, and honey just weigh down and negate all the benefits of drinking coffee. It’s said that the caffeine stimulates brain activity, reduces depression, and can counteract Type 2 Diabetes. I also find it to be a great appetite suppressant if you want to drop a few pounds.
Ginger is the one food that makes me listen. I break it, steep it, and wait. It’s a food that forces you to become patient and graceful. Moving silently, regaining an aligned temperament. In Chinese medicine it is used to release the exterior.
I suppose when we get out of our heads and begin to live in this world as wingless humans we can let go and become human.
